Skinny Egg Salad Recipe

Oh eggs.  How I love you so.  You complete source of protein, all packed into a taste filled, 70 calorie package.  You keep me full without hurting my waistband or my wallet.  And egg salad is just oh-so-easy to bring for lunches at work.  But there is one tiny problem with egg salad… it’s crazy high in calories due to all of that dang mayo!!!!  So do I have a solution for you?!?!  

Let me introduce you to the easiest, healthiest egg salad recipe out there.  Only two ingredients…. doesn’t get any easier than that!!!  At only 240 calories and 13 grams of protein, you can’t beat this for a lunch!

I threw mine on top of Dave’s Killer bread.  Dave’s makes some of my absolute fav bread.  It’s organic, whole grain, low sugar, high protein, high fiber, no artificial anything…. and Dave is a bad-ass (read about him on their website).

I used Hope Spicy Avocado Hummus for mine (check their website).  Not only is this hummus flavored with real avocado (whaaaaaaaaaaaaaat?!?!), but it’s organic, lower calorie than most hummus, and based right out of my hood, Boulder, CO!

Skinny Egg Salad

Servings: 1

Ingredients:

  • 2 eggs, hard boiled, shelled, and chopped
  • 2 Tablespoons of Hope Spicy Avocado hummus (or hummus of choice)

Directions:

  1. Mix eggs and hummus together.
  2. Enjoy on top of whole grain bread (I used Dave’s Killer Bread) with veggies of choice (I used cucumbers and spring mix lettuce).

Easy enough for ya?!
