Healthy Donuts!

Craving donuts but missed National Donut Day. Attempted to make them myself only to realize I don’t have a donut pan. Solution: Disk-nuts. Actually so good and low fat! Baked, not fried, with only 1 Tbsp of fat for the whole recipe. Disclaimer: not low sugar ha! Everything in moderation, right?!

Healthy Donuts

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 teaspoon salt
  • 3/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 Tablespoon coconut oil

For glaze:

  • 1 cup confectioners sugar
  • 2 Tbsp hot water
  • 1/2 tsp almond extract

Directions:

  1. Preheat oven to 325.
  2. In a large bowl, mix all donut ingredients together (not glaze ingredients).
  3. Roll dough into balls and place onto greased baking sheet.
  4. Bake 8-10 minutes.
  5. In a large bowl, blend ingredients to make glaze.
  6. Dip each donut in glaze once slightly cooled. Enjoy.
