Lunch time! This is a nice mix from your run-of-the-mill sandwich. I threw this sweet potato in the microwave for 8 minutes after washing it and poking a few holes in it. Topped it with asparagus baked in balsamic vinegar (leftover from last night’s dinner), rotisserie chicken (that I love to just keep in the fridge), and plain flavored Greek yogurt. Season with a pinch of salt and rosemary. Easy peasy and super filling for lunch. Also great for post workout since I’m getting my 15-20gm protein and .5 g/kg carb.
