Lean BBQ Pulled Pork

I scream, you scream, we all scream for BBQ!  That’s how it goes, right??  I LOVE BBQ, but often it’s made with fatty cuts of meat.  Well, in typical RD fashion, I’ve found a healthy and easy modified BBQ!  This is my take on a pulled pork… except lean!  And super easy!  Cue… the crock pot.

The issue with pulled pork isn’t just that it is typically made with very high saturated fat meat, but also with high sugar BBQ sauce.  So I HUNTED for a lower sugar but still tasty sauce.  Low and behold, I found it.  Straight from the heartland of Ponka City, Oklahoma.  (https://www.headcountry.com/) .  This stuff has 5g sugar/servings vs almost 10g in most sauces.  And the taste is GREAT.  If you have another low sugar sauce you like, I would love to hear about it!  

I used tenderloin in place of a fattier cut of pork in this recipe to keep saturated fats and calories down.  In general, any meat with the word “loin”= lean!  Score!

You can use this stuff however you want: on a salad, in a whole wheat wrap, or on a whole wheat English muffin with sunny side up egg like I did!

So here this the super complicated, two ingredient recipe for this lean BBQ pulled pork (can you sense my sarcasm?).  

Lean BBQ Pulled Pork

Ingredients

  • 2.5 pound pork tenderloin
  • 18 ounce bottle of low sugar BBQ sauce (I used Head Country)

Directions:

  1. Place pork and BBQ sauce into slow cooker.
  2. Cook on low for 7-8 hrs. 
  3. Shred meat and serve.
