No Sugar Added Blueberry Banana Bread

Ingredients

  • 3 small ripe bananas
  • 2/3 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1.5 cups oat flour
  • 1/2 tsp cinnamon
  • 2 scoops vanilla protein powder (I used Teras Whey)**
  • 1 cup blueberries (I used frozen)

Directions

  1. Preheat oven to 375.
  2. Mix all ingredients except blueberries with a hand or stand mixer until well blended.
  3. Fold in blueberries.
  4. Pour into a greased bread pan and bake for 45-55 minutes or until a toothpick comes out clean.

**Can omit protein powder.  I just like to beef it up a bit so that it fills me up as a snack!

    Can you suggest a substitution for the oat flour? I have cassava, coconut, and almond flours. I’m excited to make this. 🙂

      Hi Katy! I’ve never made this with another type of flour, but I’d think coconut would be the best substitute. Remember that you can also throw old fashioned oats into the food processor or blender to make oat flour!

    Should I be adding more flour if I am not adding the protein powder?
    Also does this recipe work well without eggs??

      Hey there! Yes, I would add a Tablespoon or so more flour if you leave out the protein powder. I think this recipe works great without eggs, but it is definitely more of a gooey texture than a fluffy texture. Let me know what you think!
