Lean BBQ Pulled Pork

I scream, you scream, we all scream for BBQ!  That’s how it goes, right??  I LOVE BBQ, but often it’s made with fatty cuts of meat.  Well, in typical RD fashion, I’ve found a healthy and easy modified BBQ!  This is my take on a pulled pork… except lean!  And super easy!  Cue… the crock pot.

Rotel Skillet Enchiladas

I’m a Texas girl, so I LOVE my Mexican food.  But as you all probably know, Mexican food doesn’t always love me (health-wise anyways).  It is typically loaded with cheese, sour cream sauce, fried, or loaded with high fat/calorie meats.  Mexican food is also typically heavy on the carbs, which this dish is not.  So I love this Rotel Skillet Enchilada recipe.  Not only is it healthy, but it is SO quick and easy!

Savory Mushroom and Herb Steel Cut Oat Risotto

Let me start by saying this: I have never made risotto before.  Not with Arborio rice and definitely not with steel cut oats.  So I didn’t know what I was getting myself into with this dish.  Word on the street was that risotto was tough to make, and it took a looooong time.  So I prepped myself for a potentially tiring dish.  And guess what?  It wasn’t that bad!  Ok I’ll admit it, it takes a while to cook.  And does take some personal attention (talk about a needy dish).  But hard?  Not at all.  And oh so good.  Worth every minute!

Roasted Vegetables with Turkey Patty Recipe

#easydinnertuesday. That’s a hashtag, right? Roasted mixed veggies with a turkey burger patty. Mixed some feta cheese, Worcestershire sauce, and jalapeños into the burger. Easy!
