Shrimp Salad

This shrimp salad was so tasty and so easy to make!  Many times salads are lacking in something, whether it be protein, carbs, fats, or let‘s be honest- taste.  This salad isn’t lacking in any of the above!  Protein (think: shrimp), vitamin C (think: tomatoes, onions, avocado, pineapple), fiber (think: tomatoes, onions, avocado, pineapple), and monounsaturated fats (think: avocado), this salad has it all!

Curry Tuna Salad

I’ve been craving salads recently, probably because of the heat, so I made this one up and I’m pretty proud of it!  In my mind, tuna is the perfect food.  It’s crazy high in heart healthy omega 3s, it’s high in protein, and the best part is, it’s super cheap and easy to use when canned.  I recommend albacore as it’s a bit higher in omega 3s than the chunk white.  I call that a win-win!  Cheap, shelf stable, and healthy?!?!  Not many other foods that can say that…

Watermelon & Cucumber Salad

I was craving this so much! Refreshing cucumber salad. I combined a few recipes so I could get a little of everything.  This makes a great summer salad.  I paired mine with a turkey burger straight off of the grill.  This combo of sweet and salty is just so much great complexity for the palate.
